Toddlerhood is such an adventure isn’t it? My current journey is with food. Our little guy is very picky. He loves the stuff that isn’t good for him. Tons of bread, rice, potatoes. . . you get the idea right? He will run from anything green. So I have to be a scientist in the kitchen to make sure he gets the veggies he needs. I have finally perfected my cheesy bite recipe š Do you have a picky toddler? Try this easy recipe.
Ingredients
2-eggs
-2 cups of uncooked chopped spinach
-1 cup of uncooked chopped mushrooms
-1 cup of cooked quinoa
-1 cup shredded cheddar cheese
-dash of pepper or complete seasoning
Preheat the oven to 350 degrees
Spray a non-stick cupcake or mini cupcake pan with cooking spray. We use coconut oil but whatever you prefer is just fine.
Beat your egg until its blended and set it aside. In another medium size bowl mix the spinach, mushrooms, quinoa, shredded cheddar cheese and pepper. Then add the egg until its evenly distributed. Transfer the veggie/quinoa mix into the cupcake pan.
Note: A traditional cupcake pan should have enough mix for 12 and a mini cupcake pan should have enough mix for 24. I prefer to use the mini pans because they are bite size š
Bake for 15-20 mins. You want the edges to be crispy. This way you know its done. Let them cool then use a butter knife to scrap the sides of the pan to get the bites out.
These can be served warm or at room temperature.

Wow… This looks interesting!! I do have a picky eater that runs from anything green as well. One day I literally had to mix his spinach in the potatoes for him to eat it lol. But this is next on the list of things to try!! Do you have anymore great Toddler treats!?!
